When one door closes.....

5 years ago I shut the door on a chapter of my life. I had no idea what was going to be next or what I would be doing, but I am so glad I did.

Pastry has always and will always be my passion. I have learned over the years how much broader Pastry can be. I thought it was mostly about learning a few techniques and having a delicious dessert as a result.

It is sooo much more than that. Pastry has allowed me to embrace food in a completely new way. I not only notice things I never would have before, but I truly enjoy the science behind the recipes and I am loving creating my own recipes.

Pastry can be broken down into categories, but even those categories can be broken down again and again and again. Whether it is through flavor, texture, a specific type of food that you are looking for, the possibilities are endless.

I get in my head a bit too often about the fact that I will run out of ideas for classes, for desserts or having tips to share with my students in class. I have been doing this for 15 years and counting and am not stopping anytime soon !

My ADD makes it a challenge for me to make a decision most of the time, but once I take that first step, I am usually 123 go!

I make mistakes, I get overwhelmed and frustrated, but I have also gained so much in this career that closing a door does not mean it is the end all be all. It means I am available to keep creating and it keeps me curious and excited for what’s to come.
